Bird in a Nest - Breakfast!

Bird in a Nest

Although probably a breakfast food, we are inclined to eat these at any time during the day. The recipe was inspired by these, which we found on Pinterest, of course. Here is our adaptation for 6 nests:

6-12 pieces of sliced deli ham or turkey
12 egg whites
1/2 cup chopped red or yellow pepper
1/2 cup chopped zucchini
1/2 cup chopped onion
1/4 cup Parmesan, feta, or shredded cheese of choice
cooking spray

  1. Preheat oven to 350 degrees Fahrenheit. Spray the cups of a muffin pan with cooking spray.
  2. Line the interior of the muffin cups with a piece or two of sliced deli ham or turkey. If using a thin piece of meat such as Oscar Mayer prepackaged turkey, use two pieces in each muffin cup.
  3. Fill the meat-lined muffin cup with two egg whites and a bit of each vegetable.
  4. Sprinkle a little bit of cheese on the top.
  5. Bake for 10 minutes.
